Camping menu

One of the hardest parts for me of our recent camping trip was planning the meals. It sounds simple until the realization that everything going with the meal needs to be packed. For instance, if pancakes sound good then you need all the ingredients for the pancakes plus whatever toppings (syrup, fruit, whatever) that everyone will want.

It is easy to say that Friday we will cook hamburgers but to think of everything that everyone is going to want on the hamburger as well as what sides can make it more difficult.

All in all though, I think we were all satisfied with the camping menu.

As a special surprise, we made donuts while camping. When I was a kid, my dad would make donuts out of canned biscuits that were shaped and then deep fried and rolled in a cinnamon sugar mixture. Yum.

Since we are gluten-free, those canned biscuits are out and I hoped I could find something to taste equivalent. What I ended up doing is taking a cinnamon roll Chebe mix and making donut balls with it that were rolled in cinnamon sugar. The flavor was really good but they were chewier than I really want them to be. The kids loved them though - Hubby said they had a good flavor but he couldn't really eat them (long story that will come later).

Score two for me!

As I have said, my kids are less than delighted with our new diet. In fact they have complained about it a fair bit but today I redeemed myself in their eyes. I made pancakes and chocolate cookies. I actually made 2 batches of pancakes, one a Bob's Red Mill and the other a variation on Alton Brown's Dutch Oven Hoecakes . I made the Bob's Red Mill according to the directions using vanilla soy milk but then needed to add a bit more milk because it was too thick. The hoecakes I added 1 tablespoon of sugar and didn't put in the corn (someone thinks he doesn't like corn.) Daisy loved the hoecakes although she did say that if they were very big, they were too cornbready. I agree with her, the cornbread flavor is more noticeable on the larger one. It seems the good size is silver dollar pancake size. She also liked the Bob's Red Mill pancakes, she said she would be happy with either one. White and Dark Chocolate Dacquoise

This is what my 11 year old daughter made for youth fair. So you could do this. What is a daquoise? it is a meringue cake (usually the meringue has nuts but this one doesn't) that usually frosted somewhat like a normal cake. This one has a white chocolate and dark chocolate buttercream that goes between the layers of meringue and then is topped by a ganache. uh-huh. The buttercream is not the typical birthday cake buttercream that is just butter and powdered sugar, in fact the dark chocolate has a bit of the bitter taste of dark chocolate (enough so that my kids didn't like it without the meringue). Anyway, it is wonderful! but it is also incredibly time consuming. This is something to make for a big anniversary dinner, not a I-feel-like-having-chocolate Thursday. Chic-fil-A

Last night I was gonna cook but we had 2 doctor appointments that day and a 4-H meeting and I procrastinated. So we got out of 4-H at 7:30 and I had a splitting headache and . . . and . . . and Chic-fil-A was on the way home. Although they don't really advertise it, Chic-Fil-A is a great place to get safe food. Their fries and hashbrowns are gluten-free and fried in dedicated friers - not the ones the chicken are fried in. They have the chargrill chicken that is gluten-free and is good on the salads - I LOVE the chicken and fruit salad. They also do the kids meals with the chargrill (although it isn't on the menu, you have to ask). So the kids and I went in to place our order, they were not really crowded and by the time we had figured out our order, we were the only ones ordering. So I ask for the kids meals with chargrill and she asks "Do you want the sandwich, nuggets or tenders?" I tell her the kids can't have bread so she asks if they want strips, nug...
